Chicken of the Sea Finger Sandwiches

During the mermaid days, I was teased one evening for the way I ate seafood. Hence the name “Chicken of the Sea”. These easy sandwiches are quick to make for a perfect tea time with friends.

The fish and cucumers being of the water element, red onion and pepper of the fire element. A perfect lunch for the south and west directions of life. I would consider this a passionate, love flowing meal. Visualize away.

However I am a fan of Charlie-

1 can Starkist Tuna Fish (drain the water or oil)

1-3 tsp mayo to suit

1/4 red onion diced

1/2 cucumber thinly sliced

fresh ground black pepper

7-8 slices small rye or pumpernickel specialty small cube shaped bread

*Serves 1-2. Recipe can even be tripled.  These finger sandwiches have proven a big hit at family showers. Chicken  can also be subsituted for the tuna.*

Mix mayo and tuna together in bowl. Arrange bread slices on platter, top each with a scoop of tuna. Garnish with cukes and red onion. Grind pepper on top, serve and enjoy!
