Chicken of the Sea Finger Sandwiches

During the mermaid days, I was teased one evening for the way I ate seafood. Hence the name “Chicken of the Sea”. These easy sandwiches are quick to make for a perfect tea time with friends.

The fish and cucumers being of the water element, red onion and pepper of the fire element. A perfect lunch for the south and west directions of life. I would consider this a passionate, love flowing meal. Visualize away.

However I am a fan of Charlie-

1 can Starkist Tuna Fish (drain the water or oil)

1-3 tsp mayo to suit

1/4 red onion diced

1/2 cucumber thinly sliced

fresh ground black pepper

7-8 slices small rye or pumpernickel specialty small cube shaped bread

*Serves 1-2. Recipe can even be tripled.  These finger sandwiches have proven a big hit at family showers. Chicken  can also be subsituted for the tuna.*

Mix mayo and tuna together in bowl. Arrange bread slices on platter, top each with a scoop of tuna. Garnish with cukes and red onion. Grind pepper on top, serve and enjoy!

3 bean Spicy Chili Soup

This dish holds protective and grounding energies. Perfect for a rainy day or when some negative visitors are stopping by.

1 – 2 lbs. fresh ground beef/turkey and/or pork
1 can spicy chili beans
1 can light red kidney beans – drain liquid
1 can dark red kidney beans or black beans – drain liquid
1 large peeled and cubed potato
1 can diced tomatoes (or 3-4 fresh)
1 large can tomato paste
1 large peeled and diced spanish onion
2-3 cloves minced garlic
1 tsp extra virgin olive oil
Cayenne/Chili pepper to suit about 1-3 tsp.
Ground black pepper to suit about 1-3 tsp.

Once all ingredients are opened, washed ready for preparation: trace star/pentagram over food and inside pan. Light a candle nearby. Visualize your intention for a friendly, uplifting meal/meeting with your visitors.
Start to saute the garlic and onions in the oil, once transculecent add meats until browned. If desired, rinse meat in strainer to remove excess grease and return to pan. Add all 3 cans of beans, then fill 2 of the empty cans with water; pour into pan. Also, add in the tomatoes, sauce and spices. Visualize again your intention. Stir well and cover; simmer for about 30 minutes on low.
For thicker soup you can add a thickener like cornstarch and water 3-1 ratio. Heat soup to boiling then add the thickener; stiring quickly. Soup should thicken up within a minute or two. Visualize again before bringing food to your guests/table.

Serve with any of these garnishments for a hearty meal:
shredded cheddar cheese, frito corn chips, crackers,
sour cream, sliced jalepenos, chives, croutons, bread

My version of the chili frito pie: in bowl place a handful frito corn chips, cheddar cheese and chili. Top with hot sauce and sour cream.

*For more spice add some red pepper flakes or Tabasco sauce.

Angel Hair Pasta Primavera

This would be a grounding with love meal. Use of green and orange vegetables bring in loving, passionate family energies.

2 boneless, skinless chicken breasts cut into small chunks
about 2 Tbsp. extra virgin olive oil
1 large fresh sliced carrot
1 1/2 Cups fresh (or frozen) broccoli florets or green peas
1/2 Cup sliced mushrooms or onion
2 cloves minced garlic
1 tsp basil
2/3 Cup chicken broth
1/2 Cup grated parmesan cheese
1 pkg Angel hair pasta cooked
These measurements serve 4, can be doubled easily.

Trace the star/pentagram before beginning in your pan and over the food. Light a candle in the kitchen and visualize your intention for your family to enjoy a loving, peaceful, quality dinner together.
Start water for pasta first. Heat 1 Tbsp oil in large skillet over medium; add chicken. Stirring until browned about 5-7 minutes. Remove chicken and drain to remove excess oil. Add remaining 1 tbsp oil to pan if needed. Saute the garlic. Add carrots, broccoli, mushrooms;cook about 7 minutes.
Pasta should be done by this time; drain and add a few drops of oil to keep it from sticking together. Mix in broth, basil and 1/2 of the parmesan cheese to the veggies adding in the chicken also. Simmer on low for 3-4 minutes; veggies should be tender with cheese melted.
Pour pasta into large serving dish mixing in the veggie/chicken mix. Top with remaining parmesan cheese. Again, visualize that intention from before.
Warm bread is a good compliment to this dish.

Chakra Salsa

This salsa is delicious, healthy and contains a variety of chakra colored foods.

6 ripe red Tomatoes
2 ripe mangoes, peeled, pitted
1 can whole kernel yellow corn – drained
1/4 cup chopped cilantro leaves
Juice from 1/2 lime
1 red/purple onion
1 can black beans – drained
1 tsp. fresh minced ginger
Tortilla chips

Chop all ingredients into small pieces. Mix together in a large bowl and refridgerate for 3-4 hours. Serve with blue corn tortilla chips. Magically speaking these foods carry fire and water energies cooresponding to passion, protection and love.
This salsa also compliments grilled shrimp and meat skewers.

Foiled Flounder

Seafood is said to induce loving feelings to those who eat it. To enhance your loving energy into this meal be sure to visualize loving thoughts and conversation while you are preparing it for cooking. Send your message to the universe for how you plan to spend this time with these meal. Burning a red candle in the kitchen while you cook will help increase loving energy.

1 fresh fish fillet ( I prefer grouper or flounder)

3 tbsp. butter – cut into heart shapes*

1 small onion sliced, 1 lemon sliced

salt & pepper to suit

1 tsp. basil

Place fish on square size sheet of foil. Place the onions, lemons and butter on top of fish. Season with basil, salt & pepper. Visualize again the loving outcome of the meal here.
Close foil completely around fish. Trace pentagram/star over food before putting into the oven. Bake 12 minutes or until fish falls apart.

Serve with a fresh garden salad and perhaps a glass of Chardonnay.
